April, head chef at Earnest Ice Cream

What do you do at EIC?

I am the Head Chef at Earnest Ice Cream. As the Head Chef my job involves all things ice cream, including tasting it! I have the pleasure of working with amazing local farmers and companies across BC to invent new flavours. My position also includes mentoring and training new pastry chefs into Ice Cream experts. I get to play with the flavours and science of ice cream and make dream flavours come true.

Where are you from?

My culinary career began at a young age in Southern Ontario. I trained at Niagara College of Culinary Arts and gained my experience in the pastry world for various restaurants, for the Food Network and for both large and small volume bakeries. Before moving to Vancouver I was making ice cream and bread for a fine dining restaurant in Toronto.

What do you like to do when you’re not at work?

I enjoy hiking in the mountains when the weather is nice and reading books on the couch when it’s not. Sometimes I like throwing axes as part of an axe throwing league and all of the time I like hanging out with my wife and with my cat.

What’s your favourite flavour?

Apple Pie. It is one of the first flavours I developed at Earnest, and is inspired by the apple pies my grandpa made back when I was a kid.

What do you do at EIC?

As co-founder and co-owner I work hand-in-hand with Erica to steer the direction of the company and uphold the values we built the company on. One of my particular roles tends to be questioning how or why we do things and trying to look at problems in a new and different light.

Where are you from?

I grew up in Western Washington (ancestral territory of Suquamish, Muckleshoot, Duwamish, Stillaguamish, Coast Salish, Snohomish, and Nooksack) before moving to Vancouver (unceded territory of Musqueam, Squamish and Tsleil-Waututh) in 2011 after meeting my soon-to-be-wife.

What do you like to do when you’re not at work?

I have two kids who keep me busy when not at work. I love riding bikes, cooking food, and baking treats.

What’s your favourite flavour?

I love me some Dark Chocolate Peppermint – it reminds me of Frango Mint sundaes at the Frederick & Nelson department store in Seattle. But Tiramisu and Cookie Dough are my heartthrobs, oh and Sour Cherry Goat Cheese. And I can’t forget Sticky Toffee Pudding. And of course Vegan Orange Creamsicle. Then there’s good old Mint Chip (best ever). And Vegan Peanut Butter Pretzel. I could go on…

What do you do at Earnest Ice Cream?

Co-owner/co-founder along with Ben, aka “work mom”. Together we help direct the companies what and why, and steer the company from a strategic perspective. One of my focuses is the marketing side of things, but we’re both involved in a lot of day-to-day activities and decision making.

Where are you from?

Originally Hamilton ON. I called Toronto home for a few years before finding my way to Vancouver in 2009. I’ve spent the majority of my time working in restaurants along the way with a few years in television and advertising.

What do you like to do when you’re not at work?

I’m a mother of two young children, so I spend most of my time with my family. Otherwise I like to cook, dine out and try new wines.

What’s your favourite flavour?

I’ve always said it’s almost like choosing a favourite child! Whiskey Hazelnut was my go to for years. It was knocked out of the top spot by Rocky Road – but as of late, Tiramisu has my heart.

What do you do at EIC?

I’m the Front of house General Manager. I work closely with the front of house managers and their teams in a support and development role. You’ll find me in the scoop shops overseeing the day to day operations, training and mentoring new leaders, building great teams and scooping ice cream! It’s my job to make sure the front of house staff have the support and training they need to be successful.

Where are you from?

I grew up in a town just east of Toronto, Ontario called Ajax. Home town of Avril Lavigne’s first husband Derek Wimbley and otherwise known as the town next to where Shawn Mendez is from.

What do you like to do when you’re not at work?

When I’m not in the shop I’m usually riding my bike around the city, playing sports, drinking coffee, spending time with friends or at home hanging out with my cats Moe and Cat Benatar.

What’s your favourite flavour?

All time would be the Dairy Raspberry, close seconds would be Vegan Raspberry, Vegan Mocha Brownie, Vegan Peanut Butter Chocolate Ripple, Lemon tart,
Cherry Pie, Blueberry Cheesecake or Turkish Coffee and Irish Cream!

Katie, Director of Operations at Earnest Ice Cream

What do you do at EIC?

I’m the Director of Operations at Earnest Ice Cream. My job is to maintain the functionality and standards of the business in order to drive conscientious sustainable growth through our people. Solution creator and support system!

Where are you from?

I’m from Sydney Australia and moved to Vancouver BC in 2013 on a holiday visa with the intention of only staying for a few months. Fell in love with the city and the people and Vancouver is now my forever home.

What do you like to do when you’re not at work?

I love to cook and eat delicious things, food, coffee and wine are my passions. I also love to spend time with my partner and friends and walking my two pups!

What’s your favourite flavour?

Three of my top picks right now are Tiramisu, Spicy Chocolate and Vegan Peanut Butter Chocolate Ripple.

What do you do at EIC?

As the HR & Recruitment Manager, I get to meet and interview lots of different people, and do orientations and onboarding for new hires from every department. I also facilitate the amazing group of folks who make up our Diversity Equity and Inclusion Group.

Where are you from?

I’ve always lived in this corner of the world – I spent most of my life on the unceded ancestral land of the Kwantlen, Musqueam, Katzie, Semiahmoo, Tsawwassen, Qayqayt and Kwikwetlem nations (aka Richmond, BC) and have been living on Musqueam, Squamish and Tsleil-Waututh territory (aka Vancouver, BC) since 2012.

What do you like to do when you’re not at work?

Rarely sitting still! I’m lucky to be part of this city’s theatre and arts communities and I get to wear lots of hats, but my favourites are performer, maker and consultant. When I’m not working on a project, I like thrifting, crafting, listening to podcasts, and getting treats.

What’s your favourite flavour?

Whoosh, tough call. My favourite ice creams are the more adventurous flavours, or flavours with lots of inclusions. I love our Salted Chocolate Rye Cookie, Peanut Butter Chocolate Pretzel, Sweet Corn Blueberry Swirl, and Vegan Hazelnut Truffle, and I’ll probably think of more later!
