Sweet Corn Blueberry Swirl

An April original, like a warm piece of cornbread with jam on it!

We cook corn in brown butter for a slightly nutty buttery taste and then blend this in to the ice cream base. We let this steep for a few days and then strain away the corn. We also add an almost candied corn inclusion, cooking fresh corn in a simple syrup then freezing for a sweet juicy bite. Blueberry sauce, house made from cooking fresh blueberries in sugar and water, is swirled through the finished ice cream for a fresh pop of colour! Buttery and sweet, with a slight savoury saltiness.
