This is a Chef April Horncastle original, reminiscent of her grandfather who always made apple pies for the holidays!
This flavour starts by adding cinnamon and nutmeg into our ice cream base.
We receive apples from Jobst Hof Orchard, a family operated orchard in the beautiful Okanagan Valley. The apples we chose to use are Honeycrisp; known for their high sugar and juice content while still holding some shape when cooked. These apples are rinsed, peeled, cored, and cut. They are then baked with butter, sugar and bourbon until lightly caramelized. From there we add the apples into our ice cream base keeping some of the chunks of apple.
Our buttery house-made pie crust is added at the end for a buttery and flakey texture. It’s the perfect nostalgic flavour.
